gentlemen on my jaunt to class this afternoon and every
last one of the boneables was smoooking. gross gross gross.
ANOCHE [thats last night my amigos]:
megamunchfest last night. i managed to snap a couple pics but man oh man was much more consumed.
the lovely dani at foodshouldtastegood was nice enough to send me some chippies to try out for the blog. these olive chips werent my favorite. but i dont like olives. so ya know. they were still pretty alright all things considered. and they definitely satisfied my salt craving. [for a bit. some honeychipotlechip with cottagecheese action occurred later on in the evening.]
now for the good stuff:
mmm. so good. edys loaded butterfinger. cheerios. peanut butter. and a chocolate vitatop. need i say more?
this was my first experience with vitatops. i mean. it was good. but like. not OH MY GOD AMAZING. i had higher expectations. dont get me wrong the box will not last long but i dont quite see what all the fuss is about.

i stayed up way too late last night piddling/munching my life away.
and stealing from my roommates bag of candy and such. oops.
all i can say is thank god i love to run.
i could NOT get out of bed this morning. which is totally fine since i dont have class until three on tuesday/thursdays. and i lack ambition.
then i started pondering breakfast and ZING what bed?
brace yourself. breakfast was a numbah one stunnah:
sweet wheat bagel. half with cottage cheese and some heated up frozen berries. the other half had a NEW peanut butter!!! and a few orange slices. totally hit the spot.

thanks to lovelies at pbloco this little buddy was the star of breakfast. mmmm. super sweet and artificial but so damn good. peanut butter. chocolate. bananas. how can you go wrong!?
then i crawled back into bed. but the stupid sun was shining all up in my business and making me feel guilty. ‘fiiiiiiiiiiiiiine sun. i will come suck you all up.’ aka i went for a splendid six mile run. it was great. i love being warm.
i should totally join in on lengs salad challenge. but im sure the second i commit ill run out of romaine. and i certainly cannot ahve that. plus im totally commitmentphobic. anyways. romaine. turkey. carrots. peppers. bbq/hummus/ricewinevinegar dressing of sorts. fone for CRUNCH. and apple wedges with cinnamon. i got mad love for cool crisp foods.
i was fixin to make some iced coffee to take to class. and i wanted some post lunch sweetness. aka i made my own little version of cocoa coffee. basically i just iced mine. and added a few glugs of soy milk since i dont do creamers and such. it was amazing. that bender knows whats up.
i brought along this larabar as well. PECAN PIE. i really liked it. which surprised me since pecans are probably my least favorite nut of sorts. and i dont like pie. bravo larabar. you done good. [thanks to my little lolita for sending me this little guy since i never would have opted to buy it for myself!]
class was pretty alright. except that it was sixty and sunny out. and the quad was covered with people laying around and playing frisbee and enjoying themselves. grrr. at least its supposed to be nice all day tomorrow. wait. i have class. class. class. and then straight to work. BUMMER.
i had some broccoli slaw in the fridge and i hadnt a clue what i wanted to do with it. but then i did have a clue! and then i had dinner.
i chopped up some orange pepper [my favorite!] and dug in the freezer for some corn and stirfried it all up with a few big handfuls of slaw and some shrimpalimp. the sauce/marinade/stirfrying liquid was a mishmosh: ricewinevinegar. teriyakisauce. honey. red pepper flakes. ginger powder. garlic powder. sesame oil. etc etc. super delicious. i had some kashi crackers on the side. im not sure why. it seemed like a good idea at the time. i have no regrets. also. the rest of my orange from breakfast. the little chinese restaurant back home always had orange slices along with the fortune cookies at the end and so i wanted to channel the goodness that is golden garden. [i did NOT eat that purple barrette. the orange hue was just too dominate and i was trying to make the bits of cabbage pop. awk since you cannot see a single piece of the cabbage action.]
i considered eating this with some chopsticks that i had lying around but i totally lack coordination [hello. why do you think im a runner?] and it would have taken longer than the three minutes in which i inhaled this delight. forker for life.
im already pondering dessert. mmm. decisions decisions.

i really like cashews. and almonds. and pistachios. and hazelnuts. [okay. so i like them all. but walnuts and pecans are on the lower end of the spectrum.]

oh hey. whats up yall?
i have an exam tomorrow. and well. uh. its going to be interesting.
speaking of delicious late night snacks on tuesday!
and then i had the other half of the apple. eaten like this:
my peanut butter rationing plan was out the window before i could even open the jar. oops.
and since i gave up on rationing i munched on more traderjoes spicyflaxtortillachips. [and some chocolate.]
ive decided i just need to take a roadtrip to a destination with a trader joes. anyone jonesin for a visitor? ;]
i woke up this morning and knew breakfast had to be quick so i had a cottage cheese bowl. it had been so long!
classes today drug on to no end. buzzkill.
once i finally made it back to my apartment i decided to lace up for my last run before my half on saturday [FREAKOUT].
i obviously needed some serious fuel for my two miler so i had the last half of this baby.
it was so nice out and i wanted to keep running but i was a good little lamb and only ran the two and at a comfortable easy pace. go me.
i stretched out. showered. slothed. and then whipped up this great little diddie of a lunch.
i mixed up some tuna with the bbqsauce/hummus combo and some carrot nibs and pepper bits and shoved the whole smosh into a pepperbutt. with a bit of salad action [carrots. peps. kashi lovebites. more bbq/hummus. etc etc]. i had those grapes times a bunch. also shown: insideoutdirtyyellowsweater backdrop. mmmm. classy.
at this point i set out to do some serious studying..
and countless other nibbles.
is it to late to change my major to eating..with a concentration in peanut butter?
i sort of. quasi. maybe got a little bit accomplished but then i realized i was too famished to do anything else. no really. i hadnt eaten in like thirtysevenminutes.
for dinner i whipped up a scramble with corn. peppers. carrots. spinach. salsa. and hot sauce. oh. and eggies. postphoto i smushed half of the mixture into a pita. oh the side i had the last of my random plethora of fruit and some strawberries.
my fruit stash is quite low. a couple more stawberries. a few apples. and some bananas [ a few frozen. a few supah ripe..aka perfect]. tragedy.
i just finished up a superb late night snack!
SNACKBOWL! love. this little gem has some cheerios [ i want to be her.] newmans own organic cinnamon sugar soy crisps. some zoes cranberries currants granola. pistachios. more dried cranberries. and chocolate chunks.
lotsa flavor going on here. all so so good. as far the granola goes. well. its fabulous. but i think i like the cinnamon raisin a tid better. but id take either any day of the week.
the munchfest continues on. but the camera has retired for the night. use your imagination eh?
im off to study. and by study i mean go to bed. and by go to bed i mean stay up to an ungodly hour doing who knows what with lord knows who.
and my question tonight is for all yall runners out there. its gettin to be race time..

i dont speak french.
how are things my gruff billygoat friends?
so after i left you sunday i had the most DIVINE dessert.
but i didnt take a picture because it looked so nasty. haha.
anyways. i mashed up a frozen banana. some soymilk. the
other half of my erinbaker breakfast cookie. and LOTS of
peanutbutter. it was totally unreal. i ate lots of other stuff too.
yesterday morning i woke up and had to rush off to take care of some businessssss so i grabbed breakfast and off i went.
mmm. oatmeal raisin cookies for breakfast? yes please.
between a couple of classes i jolted off to the arc to get my four mile run in [tapering and such]. unfortunately i was pressed for time so i had to sprint the four miles [subthirtyminutes] and so i think i defeated the purpose of tapering?
yeah. im that sweaty girl in class. gross.
at least i had time to shower before work?
packed lunch for sure. i feel like this picture makes my salad look very small and my fruit look very big. either way it was all very good.
and well..i work at a cupcake bar. and we just started our new spring flavors yesterday. aka there was a lot of nibbling going on. the things i do for my customers right?
i may have also made myself a vanilla latte for my trek home. yum.
please note that i am wearing gloves. also note that i ran in shorts and a tank top on saturday.
dinner was a classic. but first..
i munched on a ton of grapes. i shouldnt buy grapes because i could easily eat the whole bag in like three opens of the refrigerator..if that makes any sense. [i wish i could invite you all into my head. things make so much more sense in there(here?).]
say it yesterdaywasyourbirthdaygirl! plus a mishmosh of veggies and black bean. and BBQ SAUCE.
i have a big ass exam on thursday so i tried to pretend to study for a bit but uh..
chocolate [thats not a whole bar..] kettle corn. zoes granola. LOTS of salt and cinnamon. munchcrunchlove.
interpret this as you will. [but lets just say im now down to four jars of peanut/nutbutter..or so i thought (foreshadowing much?).]
i probably ate more too. because its me.
i added soymilk to my oats for the first time ever this morning.
holy bagoly majoly. so good.
i tried to leave a wee gap in the toppings [which were fone. dried cranberries. and recalled nut of sorts.] so you could see how creamy the banana soymilk combo made them. no dice.
eventually i headed off to do some light crosstraining. just thirty on the arctrainer. i took it supah easy and just enjoyed my ‘what not to wear’. oh clinton kelly..you will be mine. oh yes. you will be mine. and by mine i just mean well shop together and talk smack about other people. swoon.
working out vigorously [!?] requires much refueling.
a salad of sorts. bbqsauce makes my world go round. so do: carrots. peppers. kashi lovebites. turkey. and colorful bowls of fruit..since my salad was sort of dichromatic. [not a word?]
AND THEN I CHECKED THE MAIL!

chocolate times two. peanutbutter times at least six.
words cannot describe my friends. ah. and the jar count is back up to five! [well..four and a half at this point. oops. MUST RATION!]

another win for team gnu. better than the banana id say but still no peanut butter.
my stomach has been on and off again wonky for the past couple of days so dinner is a little..awkward? i dont know man. it was just what sounded good. and i enjoyed it so that really all that matters.
these chips are from trader joes and are my loooove. in the past couple of nights ive eaten over half the bag. [MUST RATION.] i definitely went back for more chips and cottage. nom.
now i for real am going to study. seriously guys. really.

so since friday ive eaten A TON but my pictures are all
sort of blah or nonexistent so were just going to pff that.
just imagine lots of good healthy eating all day long. and
then once the night arrives LOTS of cereal. peanutbutter.
chocolate. cottagecheese with spicyflaxchips. etc etc etc.
you havent missed too much excitement in my not eats either.
worked for a long arse time friday. ran all day saturday. worked
for another long arse time saturday night. grumble grumble.
the silver lining to all that work though. i just HAD to sample
the new truffles and caramels and sparkling wines we got..
you know. just in case someone was curious about any of them.
and the gelatos arent new. but i had to remind myself of how
scrumptious they were since id been away for break and such.
yesterday i ran thirteen miles. BALLIN. my hip got a bit tight
around mile eleven which sort of freaked me out. moh well.
hopefully i can manage to tack on that last point one miles
next weekend. i dont know though. cross your fingers eh? ;]

NOW ONWARD TO SUNDAY.
i woke up and slothed around in bed for an excessive amount of
time because its sunday and pretty much required in these parts.
eventually i realized eating is required as well so i had this gem:
i polished off the corn bran. seventeen servings. hahaha. more like five. also in the pool..soymilk. protein powder. frozen banana chunks.
the colors in the bowl were sort of bland so i dove into my dirty laundry for that shirt for a pop of color. the things i do for you guys.
then i continued to sloth in bed for a long ass time. totally fine.
doing absolutely nothing is hard work so i had to refuel.
as you can see the novelty of the monster plate has worn off.
i whipped up a wrap with spinach and a mixture of carrots. corn. broccoli. black beans. salsa. etc. the bit that wouldnt fit in got its own cute little bowl. alongside i had some delicious fruit from earlier in the week. much more colorful than breakfast for sure.
more bed action. hollah.
i should add that all of this time spent in bed was sort of productive. i had lots of school work to do. it only took me like eight hours to do about fortytwo minutes worth of work. thats pretty legit for this gal.
at this point my fridge was pretty barren so.. GROCERIES. yesssss.
before i left i ate a banana. no picture because my camera battery was charging.
i pretty much looked like this:
at the grocery store i also managed to munch on half the bag of grapes while perusing. i totally owe meijer like threebucks. oops.
meijer didnt have much by way of sweet potatoes so i zipped across the street to walmart afterwards to pick up a couple. walmart randomly has a subway in it? so on the way out the door the smell of stinky feet wafted towards me and i was hooked. damn you subway.
ovenroastedchickenbreast with lots of veggies. mmm. banana peppers. and i dont know whats in that cup but its definitely not diet coke. i only put wholesome healthy good for me things in my hotbod.
now im back in bed because i havent spent enough time here today.
i really need to ‘study’ but im crazyintelligent and so it is unnecessary.

yesterday morning i had a lovely six mile or so run.
i got all nice and sweaty. and red and puffy. sexy no?
then i came home and ate. i mean showered. [nah man. i ate.]
just a snackish plate of sorts. i ate double the amount of cottage cheese and crackers for sure though. i think i eat half my meals before they even make it to the plate. whoops. [and yeah. that monster is totally tryin to eat my cottage cheese. i showed him what was up though. no worries.]
lunch dessert! strawberries. chocolate. peanut butter. could it get any better?! [well..chocolate covered pretzels would have been nice but..]
i packed up this little gem and headed out to my classes.
this was a GNU flavor for me and good grief was it swell. i think i preferred the peanut butter [shocking i know] but this one was super divine. i think maybe a peanutbutterbananawalnut fusion is in order. and hey. i still gotta try the chocolate one. hmmmm. i like where this is headed.
so i had made a point to check the ten DAY forecast in the morning..but failed to check the ten HOUR forecast. aka i had a nice walk home in the rain. in leather flipflops. sans umbrella. oy.
dinner was so good though that i totally didnt care.
i baked up a sweetpotato and mashed it all up with some black beans and bbqsauce and wrapped it all up with some spinach in a flatout wrap. sooo good. i broiled the whole thing to help keep the wrap together. when i was done i seriously contemplated making another. i also tried kale chips for the first time. they were so awkward and made me uncomfortable while i was eating them. but i definitely loved them. [!?] and yay for delicious fruit.
then i started to get a little stressed out. and when this galfriday
gets stressed out she EATS. so i did.
this was so good. my first time trying the erin baker breakfast cookies. definitely not my last. the ingredients are totally legit but the cookie taste did not reflect that. seriously. go try these. [that notebook is just for you munchhead.]
at this point i started going at the jar of peanut butter to comfort my sorry self. and then i thought this might work out better than just straight up spoonfuls:
comforting and delicious.
but i still ended up with more skippylove.
and some more kashis with cottage cheese.
and a piece or two of chocolate.
im stressed out okay. dont judge.
anyways. zzzzzzzz. but not really.
i did not sleep well last night. bummer.

my head is all congested and nast right now [definitely self-induced. thanks again stress.] so im takin the day off on the exercise front. sometimes its just what you need. ya know?
im gonna go whip up some lunch and then shower and get ready for work. grumble grumble. think of me while youre all off enjoying your friday night. i think im the only person that more often than not does not look forward to friday. come on sunday.

anyways. in true erinbee style ive gotten a bit behind on my posting havent i. mah bad. i am here now and that is all that matters. right?

this salad was saladtastic. the usual suspects of romaine. spinach. carrots. peppers. etc were present as well as frozen corn and broccoli. [unfrozed. duh.] and a crumbled up morningstar southwestern veggie cake i found hiding the in the back of the freezer. and of course i brought back a jar of my FAVORITE SALSA EVERRR from home so i had lots of that as well. and some stolen franks hot sauce. thanks roommate. hah. on the side i had banana chunks. kiwi niblets. and a huuuumungo strawberry.
SOME of my late night munches:
looks to me like a chopped up apple with my new ZOES GRANOLA. oh my goodness. this stuff is so great. the lovely zoe-ites [aka tori] sent me a granola sampler pack to try. this is the cinnamon raisin. but really they should just call it ‘heckatastyyall’.
mmm. peanut butter. figgers. newmans own chocolate. i had at least double everything shown here. maaaaybe a bit more chocolate and peanut butter..but its been a while so i cannot be certain. ya dig?
the day of twos.
it had been far too long since banana oats had graced my mouthicle. divine. and with that i finished off another jar of peanut butter. [no worries. i have like five more jars. stocked up for sure when it was on sale at meijer. four for fivedollars much?]
it was all drab and dreary outside so i did some yoga in hopes that the rain would stop. no such luck. so i had a snack instead.
blurfest. and i had a lot more of those newmans own organic dried cranberries. they were supah sweet and i could not stop.
i eventually made it to the arc since i found my icard. holla.
i did some easypeasy arctrainering because i wasnt so much lookin for an intense workout as i just needed to get out of my dreary apartment. i also did weights because im a bodybuilder.
i got workout number two in on my walk home in the rain. this poor old man was havin some wheelchair issues so i wheeled him home. hardest. thing. ever. [and i know hard..] he insisted the brakes were not on but im callin his bluff. at least now i am doubly swoll.
lunch was another salad. i like em apparently. spinach. romaine. carrots. peppers. salsa!!. chicken slices. and such. with a wee bowl of kiwis and strawberries. and some newmans own organics white cheddar soy crisps. after the picture i finished off the bag. [thank goodness the are only threeandahalf servings per bag. oh. and that theyre air.] still super delish though. i love flavored crunchy air. and a serving actually has somethin like eight grams of protein. if you say so nell.
and some chocolate popped into my mouth on the way out the door to classville. mmm.

as you may recall back in the days of my creepybabyprime i tried the orangecranberry gnu bar and was less than pleased. however..i GNU [bahaha.] that the other flavors were more up my alley and so my dear friends at gnu hooked me up with the other four flavors to try. this peanut butter bar did not disappoint. go gnu!
oh mannnn. its like the neverendstory up in here. [!!! who wants to come over for a movie night!?]
i somehow made it through my classes without inflicting pain on myself or anyone around me. progress.
the most important part of this dinner for me was making sure that everyone could see my new plate from target. with that being said i had double that amount of cara cara orange chunks. looooots more pretzels and hummus. and i added more of my tunahummuspretzelbbqsauce mosh to the sandwich thin.

for lunch i met up with a bunch of the people that i studied abroad in rome with. also present was my main squeeze fabio parsecoli. he was our instructor while in rome. hes also written a book or two or so and teaches at nyu and in barcelona. and he was a writer for gambero rosso but apparently its just got bought out and he wasnt happy with where things were headed so he jumped ship. yada yada. what im trying to say is hes a jack of all trades. and who doesnt love an italian man? it was nice to chat with him and all my little romepals.

anyways. what im trying to say is that lunch was provided by the department. so no picture. BUT i did manage to swipe some leftover grub so i have a picture of that. but its not loaded on my computer so youre just going to have to wait.
im currently munching on pretzels and salsa. munching in the mindless straight from the bag/jar sense. i should probably stop. its gorgeous outside [though a tid windy] and i think a nice little diddie of a run is in order. or maybe a nap..by the window?

i dont so much think its ‘natural’ since they all have more than just peanut butters. but it is better than their counterparts.
i eat lots of skippy natural mostly because meijer hooks me up with super good deals that i just cannot turn down. its actually on sale this week too. uh oh..damn you meijer.

this hot mama is supa tired so lets make it happen.
yesterday was a splendid day of sorts.
well..for the first half my body was noooot pleased with me. but whatever. shut up body. i spent the day with cath and such. panera. target. haircut. yadayada. im not a fan of the haircut. i dont like haircuts. i have serious separation issues. especially with my rattyasshair.
wait. yesterday was stupid. i hate snow. grrrr illinois.
now onto today!! sundayyyyy.
i slothed out of bed and meandered downstairs to whip up a gourmet meal of sorts.
at first i thought i wanted cottage cheese. but i wasnt sure. so i ate a few spoonfuls outta the tub and decided no. i dont want this. and then i ate some more. [!?] so i schmeared a sandwichthin with peanut butter banana and berries. this was for sure what i wanted. coffee may have been brewing whilest this photo was taken. its an addiction kids. :]
can someone explain where half the peanut butter went in two days?
it was snowy/slushy outside but i reeeeeeally wanted to get a long run in. and i didnt want to have to resort to the rickety old treadmills at the hospital so i bundled myself up and was on my merry way.
midrunsustenance: obviously i ate more than just the one fig NEWMAN.
fig newmans are supa good. however if youre going to eat them midrun eat them BEFORE you hit the water point. i was in front of my house at around mile sixandahalf and i guzzled some water. and then at about mile seven i nibbled on these puppies and they definitely gave me the energy to finish up my run but my mouth was hootin and hollerin for some more water.
oh. by the way. i ran twelve miles. i think i ended up running it in an hourforty. give or take. i need a watch. no biggie. [oh man. kidding. biggie!]
it was a pretty ballin run. minus having to prance through/over/around snowslushpuddles. gag. i want to live in la jolla. NOW.
after my run i whipped up a couple of batches of roasted red pepper hummus for the mum and myself. yum. i may have a had a spoonful or three while making it. just to make sure it tasted right of course.
for lunch i mixed up a packet of tuna with bbq sauce and hummus and chopped up peppers carrots and zucchini. i plopped it all on the last of the spinach and for some CRUNCH i added lots of fone. mmm. a juicy little nectarine decided to join the party as well. gobble.
at this point i realized that im in college and so i loaded up my little janky jetta and started off on my three hours journey.
running twelve miles and then driving for three hours straight do not happy legs make. STIFF. [hahaha. i wont take it there.]
along the way i munched on this gal.
ive always been more into the clifs over the lunas but this littlelass was on sale a couple of weeks ago so i picked her up. she was pretty damn good actually. maybe i should give lunas another go?

after i got back i hit up meijer because a girls gotta eat.
im really bad at actually buying things i need so we will see if i have sufficient food to make at least three meals tomorrow. [my moneys on: not gonna happen.]
by the time i got back to my apartment and unloaded all the my schnaz i was ravenous. ive had a kashi frozen dinner in my freezer since the first week of school and i thought it was probably past its prime and it was an easy fix so into the darling red microwave it went. it took a whole fourandahalfminutes to heat up so i munched on anything i could get my hands on until it was ready.
in a pitiful attempt to pretend im still at home and have access to legit produce i added like a cup of frozen broccoli.
okay. this girl is callin it quits. sorry for a razzlefrazzle post of sorts.
i feel like i had something quasi important to say..type? but now i do not recall. moh well.
ugh. im more joyous news i just got my work schedule for this week.
woo. party party up in the cupcakefactory all weekend. [i hate my life.]

it was cold this morn. and i hate cold. and more so i hate running in the cold. mostly because i like to breathe. and when i combine cold and running not so much. so i managed to not breathe for a good three miles/twentyfour minutes [im callin up the folks at guinness..that has GOT to be a record of some kind]. then while the heart was still a pumpin and the snot was still a flowin i got my shred on.
i like this game because basically my lunch was the same thing ive been eating all week..but i get to blame it on someone else. ;]
okay. it wasnt the same thing ive been eating all week because it was SO MUCH BETTER. this lunch totally hit the spot [no..not THAT spot. pervert.]
so im nearly twentyone..but i look twelve. ergo i can still play with my food. kapeesh?
i had no intention of incorporating blueberries into my lunch but a girls gotta do what a girls gotta do.
so heres what went down. i shoved. err. delicately positioned a flatout wrap into an oven safe bowl and stowed her away in the toaster oven whilest i prepared the innards.
you cannot see it so much but there is a layer of sauteed spinach topped with all those above veggies: peppers. onions. zucchini. mushrooms. carrots. etc. these were also sauteed with some FAJITA spices. mmmm.
and of course the blackbeandip/salsa combo had to rear its ugly head. and by ugly i obviously mean delicious.
enjoyed with a cara cara orange and of course those gosh darn blueberries.
and i may or may not have just ran to the kitchen and hit up the peanut butter jar just a tick ago when i was typing out breakfast. but whos to say for sure?
cath is gonna be home from work in a bit and if i dont clean up the explosion i left in the kitchen it may be the end of me and we simply cannot have that now can we?
