sunny sunday!

..only its wednesday? [at least i think its wednesday?]

anyways. in true erinbee style ive gotten a bit behind on my posting havent i. mah bad. i am here now and that is all that matters. right?

backbackback it up to monday noche.

this salad was saladtastic. the usual suspects of romaine. spinach. carrots. peppers. etc were present as well as frozen corn and broccoli. [unfrozed. duh.] and a crumbled up morningstar southwestern veggie cake i found hiding the in the back of the freezer. and of course i brought back a jar of my FAVORITE SALSA EVERRR from home so i had lots of that as well. and some stolen franks hot sauce. thanks roommate. hah. on the side i had banana chunks. kiwi niblets. and a huuuumungo strawberry.

SOME of my late night munches:

looks to me like a chopped up apple with my new ZOES GRANOLA. oh my goodness. this stuff is so great. the lovely zoe-ites [aka tori] sent me a granola sampler pack to try. this is the cinnamon raisin. but really they should just call it ‘heckatastyyall’.

mmm. peanut butter. figgers. newmans own chocolate. i had at least double everything shown here. maaaaybe a bit more chocolate and peanut butter..but its been a while so i cannot be certain. ya dig?


the day of twos.

it had been far too long since banana oats had graced my mouthicle. divine. and with that i finished off another jar of peanut butter. [no worries. i have like five more jars. stocked up for sure when it was on sale at meijer. four for fivedollars much?]

it was all drab and dreary outside so i did some yoga in hopes that the rain would stop. no such luck. so i had a snack instead.

blurfest. and i had a lot more of those newmans own organic dried cranberries. they were supah sweet and i could not stop.

i eventually made it to the arc since i found my icard. holla.
i did some easypeasy arctrainering because i wasnt so much lookin for an intense workout as i just needed to get out of my dreary apartment. i also did weights because im a bodybuilder.

i got workout number two in on my walk home in the rain. this poor old man was havin some wheelchair issues so i wheeled him home. hardest. thing. ever. [and i know hard..] he insisted the brakes were not on but im callin his bluff. at least now i am doubly swoll.

lunch was another salad. i like em apparently. spinach. romaine. carrots. peppers. salsa!!. chicken slices. and such. with a wee bowl of kiwis and strawberries. and some newmans own organics white cheddar soy crisps. after the picture i finished off the bag. [thank goodness the are only threeandahalf servings per bag. oh. and that theyre air.] still super delish though. i love flavored crunchy air. and a serving actually has somethin like eight grams of protein. if you say so nell.

and some chocolate popped into my mouth on the way out the door to classville. mmm.

i packed up this little diddie for a snack:
as you may recall back in the days of my creepybabyprime i tried the orangecranberry gnu bar and was less than pleased. however..i GNU [bahaha.] that the other flavors were more up my alley and so my dear friends at gnu hooked me up with the other four flavors to try. this peanut butter bar did not disappoint. go gnu!

oh mannnn. its like the neverendstory up in here. [!!! who wants to come over for a movie night!?]

i somehow made it through my classes without inflicting pain on myself or anyone around me. progress.

the most important part of this dinner for me was making sure that everyone could see my new plate from target. with that being said i had double that amount of cara cara orange chunks. looooots more pretzels and hummus. and i added more of my tunahummuspretzelbbqsauce mosh to the sandwich thin.

ah! monster! ah!

i was super snacky last night. [..as opposed to everyother night.]

another delicious mosh of cinnamon raisin zoes granola. apple chunks. soymilk. and cinnamon. its the bombdiggity.

how adorable are these!? i found them at the walmart back home awhile back and sweet talked them into the basket. thanks cath. :]

somehow throughout the night i ingested FIVE candycane frangos..but didnt manage to get a picture of any of them. i got skills.

there was more but ill spare you. i was really proud of myself for not going at a new jar of peanut butter until i realized that by not having a spoonful or two i ended up munching on much more throughout the night. oops?


oh hey. its today now.

another amazing bowl of cornbran. soymilk. chocolateprotein powder. and banana chunks. oh wait. frozen mixed berries decided they wanted to join the early morning rushfest.

then i did the college thing.


for lunch i met up with a bunch of the people that i studied abroad in rome with. also present was my main squeeze fabio parsecoli. he was our instructor while in rome. hes also written a book or two or so and teaches at nyu and in barcelona. and he was a writer for gambero rosso but apparently its just got bought out and he wasnt happy with where things were headed so he jumped ship. yada yada. what im trying to say is hes a jack of all trades. and who doesnt love an italian man? it was nice to chat with him and all my little romepals.

anyways. what im trying to say is that lunch was provided by the department. so no picture. BUT i did manage to swipe some leftover grub so i have a picture of that. but its not loaded on my computer so youre just going to have to wait.

im currently munching on pretzels and salsa. munching in the mindless straight from the bag/jar sense. i should probably stop. its gorgeous outside [though a tid windy] and i think a nice little diddie of a run is in order. or maybe a nap..by the window?

i dont so much think its ‘natural’ since they all have more than just peanut butters. but it is better than their counterparts.

i eat lots of skippy natural mostly because meijer hooks me up with super good deals that i just cannot turn down. its actually on sale this week too. uh oh..damn you meijer.

well hello.

is anyone else starting to think that the sun has forgotten how to shine? lord knows ive forgotten what sunshine looks like. buzzkill.

anywhooo. last night i had some munches. self-explanatory at this point.

times this picture by three. and then add in a few handfuls between pours.

and a moment of silence please. we lost another jar of peanut butter.
five days. not bad. not bad at all.

of course all i wanted when i woke up this morning was peanutbutter. no such luck. i found a pretty legit alternative breakfast though.

i spent most of the morning putzing around. i like to putz.

i nibbled a bit as i waited for some sunshine. no such luck.

i went out for a fivemiler. it took about fortyminutes give or take. when i started my legs felt tighter than a .. i think such inappropriate thoughts. you guys have no idea how much i censored myself for yall. thankfully after a half a mile or so they loosened up a bunch. woo.

i had to shovel down lunch so i could head out and check my car checked out by my mothers fellafriend.

spinach. mixed greens. carrots. peppers. corn. sweet potato chunks. pretzels for some crunch action. salsa/blackbeandip ‘dressing’.

i feel like i should apologize for such repetition in my eating. but im not going to because this was the bomb diggity. youre gonna have to deal.

apparently my trunk is all cock-eyed so when it rains my spare tire well gathers water. glorious. always the optimist matt told me i should just enjoy the fact that i have a hot tub in the back of my car. hardy harr harr. not amused.

cath tried her hand at homemade pizza dough tonight. oy ve.
this recipe calls for heating the pizza stone and then just putting the pizza on it for five minutes to crisp up. the transfer to the hot stone was quite a sight to be seen. i wanted a super crisp thin crust. hahahaha. not even close. oh well. it was still a delicious disaster.

i roasted peppers. onions. mushrooms. etc. then added those and some sundried tomatoes to the sauce laden dough. goodness that picture is haggard.
i cut some it into more manageable chunks and plated them with grapes and kiwi. divine.

and then five minutes later i went back and hoovered the rest of it down.

and then five minutes later my stomach began to register the fluffypuffy crust. oops.

i just finished up some yoga in hopes of stretching my leadlegs out.

oh and dont worry. cath and i went and got some more peanut butter this afternoon. ;]

so whats the word..thin and crispy or chewy doughy crust?

im a total thin and crispy girl. with loads of veggie toppings. nom.

spring break is flying by. is wednesday seriously over?!

per usual i am behind on the bloggage. oops. no worries. im here to get you up to speed.

monday night ended with lots of peanut butter and crackers as well cereal. no pictures. scroll down. i have a couple of pictures of peanut butter on here im sure. ;]

i woke up yesterday and made the most scrumptious of breakfasts.

i started off with this amazing bowl of strawberries. nectarine. kiwi. blueberries. and grapes.
and then i added loads of cerealmash and vanilla yogurt. enjoyed with the latest issue of clean eating magazine and a cuppa joe.

the rest of the day was awkward in terms of eating. it rained on and off aaaaaall day and so i kept just eating light ‘pre-run’ snacks and then as soon as i would throw on my nikes and down pour started up again. eventually i went to the hospital [where my mother works] and used a treadmill in cardiac rehab after all the patients were done for the day. five sweeeeeeeaty miles in about thirtyeight minutes. and i piddled with some weights for a few.

heres the one picture i managed to take between breakfast and ‘dinner’. mmm. i love airline pretzels. haha.

after my sweatfest i made ‘dinner’ though it was pretty early. either way it was divine.

salad contents: mixed greens. spinach. sauteed zucchini. mushroom. peppers. carrots. corn. etc etc. my ‘dressing’ was a mix of trader joes black bean dip and salsa. and trader joes veggie tortilla chips on the side. my little egyptian camel friend wanted a bite.

then to continue on the with trader joes munchin i went back for more chips and black bean dip. so good. so good.

i obviously needed late night nibbles.

edys fudge tracks. newmans own peanutbutter newman os. lotsa peanut butter.

and then when i was taking my little mug back to the kitchen i decided to fill er up again.

this time we have gala chunks. cerealmishmosh. and more peanut butter.

mmmm. yoga and a warm cozy bed.

this morning i woke up and had breakfast before heading to the doc for my annual check up. mmmm. my favorite.

i swear there is a bagel smothered in a peanutbutter/yogurt mix under there somewhere. such a perfect way to start my morning.

lunch was pretty superb as well. that wrap is hiding an eggie scramble with lots of spinach. peppers. carrots. mushrooms. salsa. and black bean dip. half a pear. and grapes. [i ate lots more than pictured.]

for dessert i had the other half of my pear with the last of this jar of italian generic brand nutella. whats that they say..when in rome? [hahahaha. i thought that was way more funny than i should have.]

as you may have noticed i have serious obsessions with certain foods. [hello peanut butter. cereal. sweet potatoes. chocolate. etc.] so it should be no surprise that this was my afternoon snack:
LOTS of trader joes veggie tortilla chips and black bean dip. i am not kidding when i say lots. i generally cant go more than three hours without food and i was still miserably full a good four hours after this munchfest.

somehow i still managed to find room for dinner. ;]
i baked up a sweet potato with spinach. bbq sauce. peppers. mushrooms. carrots. and pineapple. this picture is terribly awkward but youll just have to believe me when i say this was delicious.

and now i think were pretty much updated. woo.

since my afternoon snack was so much bigger than usual maybe i wont be AS snacky tonight.

hahahahahahahahaha. who are we kidding.

it was cold and dreary all day today so i just wasnt feelin a run in the frigidness so i did some level three shredin and core yoga this afternoon. i was a hot mess afterward. love.

i think ive bumbled on for long enough. hope all is well on that side of the screen.

hi guys and dolls.

we have much to chat of so lets get to it.

edys fudge tracks. cereal!!! and newmans own organics newman os. peanut butter style. [see below for a bit more].

then i went back for more cereal. this times two:

awkward combo? maybe. but i still ate a boatload. nom.

newmans own organics peanut butter newman os.
these were super good. as one would imagine they taste quite similar to oreos. but without all the ridiculous ingredients. peanut butter. chocolate. cookie. what more could you ask for? the only downside was that a serving was two. who only eats two cookies? not this girl. nu uh.

i crashed and woke up yesterday morning to some yoga. refreshing.

this breakfast was the bomb diggity. toasted bagel with peanut butter and strawberries. blueberries. and banananananana.

then i was all set to go out for my long run. but the weather thought otherwise. i nibbled throughout the morning and FINALLY got to head out for my run three hours after planned. obnoxious.

i pounded out ELEVEN miles [woo. new distance pr.] in straight up an hourandahalf. i was draggin the beginning but once i got my ass in gear it was a pretty great run all around. i did a fiveandahalfish mile loop. twice. so once i finished the first lap i was in front of my house and i enjoyed this midrun snack:
i ate about a third of the clif bar before the run. a third midrun. and a third post run. it worked out quite nicely. it was my first time eating midrun. i definitely thought it helped me keep my energy up for the second half. but that could just be the placebo effect? that yellow cup is full of water. fyi.

cathmeister had a meeting in the next town over. aka a much more legit town than mine. so i tagged along and sipped a latte at panera while she met.

i discreetly captured a photo on my mac so that i didnt have to be the creepy loner girl in the corner taking pictures of her latte.

during this time i was fixin to register for my half since i had been putting it off to see if my hip would be able to handle the distance/training and i was devastated to find out that IT WAS FULL! i freaked out my friends. freaked. out. i emailed everyone i could from the ‘contact us’ section and did everything in my power to not burst into tears in the middle of panera. thankfully a nice chap emailed me back a few hours later and said that if i mailed in a registration form he would set me all up. PHEW.

cath and i hit up los agaves for dinner. typical momandpop mexican style restaurant. i got the pescado something or another.
tilapia [which was huge. its buried but took up well over half the bigass plate. at least the size of my head.] shrimp. zucchini. squash. peppers. onions. mushrooms? loads of butter. side salad. and all the usual mexican restaurant bells and whistles.

then we hit up target and i went to the grocery store again. because i needed bananas. somehow i managed to leave with much more? oops.

obviously dessert was necessary once i got home.

i started out with a honkin bowl of edys fudge tracks. cereal mix. and peanut butter. so good. so good.
and then i remembered that i had ran eleven miles so i had a couple more servings of cerealmix with strawberries and blueberries. check out my cute new bowl from target. loooooove clearance endcaps. :]

this morning cath and i set out on a bit of adventure. i was in dire need of a car. [since i totaled mine in november. stupid icy interstates. :/] we headed out bright and early this morning.

packed up breakfast. i am sooo loving the abundance of fruit i have at my disposal right now.

lunch was just at a random italian restaurant/bar. no picture because i just got a grilled chicken salad. nothing too special. but it did its job.

after several breakdowns on my end i finally got my car! yay. its an ohfour grey jetta. shes definitely got some lovin goin on by way of nicks and scratches but shes all mine and i am in love.

dinner was inspired by everyones favorite bender. COSI. oh my goodness. it was super good. no wonder jenn used to eat there all the time last spring. i got the ‘duo’. half fire-roasted veggie and a bowl of tomato basil soup. however they accidently made me a full sandwich. bummer. it was so good. i loved the soup. and i ended up plopping a bunch of the roasted veggies [zuke. squash. onions. peppers. eggplant. etc.] into the soup and then using the flatbread to scoop it all out.
cath got the chicken bmt [basil mozzerella tomato] and loved every bite.
[she had the soup too!]

we did what we had to do.

since we were in the suburbs we hit up trader joes because its my all time favorite and i get to go about once a year. tragic. i got some good stuff so be ready for it. :]

now im plopped on the couch enjoying a bowl of delicious.

for some reason this dish of amazing does nothing for my hunger so ill probably raid the kitchen in a tick. the camera battery is for sure charging so pictures just arent gonna happen. rest assured it will be delicious.

wow. ive eaten out a whole sackload in the past few days which is so out of the ordinary for me. when im at school i DO NOT eat out. ever. cath and i have just been out and about so much that we dont have many other options ya know. this girls gotta eat.

we have a cute little place on campus called za’s. its got soups. salads. sandwiches. pasta. and pizza [!!!] and everything is customizable. i dont know if its my all time favorite restaurant but i do enjoy myself every time i go there. i love being able to get exactly what i want when i eat out.

yeah. i really dont know where that title came from.

since i left you all in such eager anticipation of my last nights dinner lets just do the damn thing.

but youll have to hold out just a tick longer. were startin with caths.

a pumpkin curry of sorts. i tried it. super delish. shrimp. pumpkin. green peppers. yum.

okay okay. here it is yall:

so it was just called ‘eggplant’. id call it delicious. eggplant. green peppers. onion. shrimp. and a DIVINE black bean sauce. this was soooo good yall. and look at how cute the little flower carrot on that rice is. !!!

after dinner we hit up the grocery store to get some essentials. aka ice cream. and of course loads more.

my mum taught me all about cereal mixing. heres a premixed mash of kashi go lean. kashi crunch. and fiber one. and edys fudge tracks. and of course between bites i finished off this:
peanut butter killah at it again.


this morning i lazed around in bed and did some yoga before breakfast.

imma call these my ‘spring break oats’ because i accidently put in a load of vanilla and my oats looked like they just got back from a week in cancun. bananas. cinnamon. dried crans. cereal mosh. and a fresh dollop of peanut butter also join the festivities. [i swear theres banana oats in there somewhere.]

then i went for a lovely four mile run. paced about eightminute miles give or take. which is way fast for me not on the treadmill. im usually a slowpoke when i dont have anything to pace me.

the weather was fabulous today. we got to about sixty and the sun was a shinin all the day long. score.

haha. sorry im such a cheeseball. this salad was soo good. mixed greens. strawberries. peppers. carrots. blueberries. balsamic. with kashi lovebites on the side. :] and a random hardboiled egg white for protein.

apples with hummus make the best snack.

scrambled delight with mushrooms. peppers. carrots. spinach. and salsa. with a sweet wheat bagel schmeared with peanut butter and jelly. check out the table decor. we keep it classy in these parts.

now im chillin on the couch. ncis much?

im stuffed from dinner. i hope this goes away soon. im jonesin for an ice cream fix.

i loved hearing about everyones first jobs. ive had some doozies. dairy queen. [in the back. lots of greasescrubbin. not so much the cutesie ice cream job.] classic tan. [love cleanin up sweat puddles.] american eagle. [i now loathe malls. and christmas.] but my FIRST job was detassling. [god bless the midwest.]

after work im makin the trek back to hicksville
for a week of fun in the sun. and by sun i mean
cornfields. cold death cornfields. but i cant wait!

buuuuut as interesting as cornfield are lets get to
something a bit more excited. aka fooooood. yum.

now where were we? oh yes. wednesday lunch.
well of course i had to have to dessert!


then i packed up some dinnerage and headed to work.

nothing new here. chicken. bbq sauce. peppers. spinach. etc. and a pear.

sorry for intense repetition. just tryin to make due with what
foods i have in my apartment since ill be headed home soon.

and then because i was bored and it was there i snacked on this:

cinnamon banana walnut muffin. these babies are biggens.

and i had some rooibush cream caramel tea for my trek home.

and then once i got home i went to bed.

just kidding. i snackattacked my way into the wee hours of the morning.

you know. popcorn. figgies. chocolate chunks. kashi h2h. cinnamon. etc.

a big ole apple. hey. howd those reeses get in there. oops.

and then the faux peanut butter experience made me want. wait..NEED the real deal. so i had a spoonful. or three. :]

then i really went to bed.

after a jammin yoga sesh i was cravin some deliciousness so i went with the best clif bar flavor. ever. and a big juicy orange. none of that bitty cutie nonsense.

i went to the arc. using my license. i can only do that twice a semester so i had better find that silly ole icard or get a new one. stat.

five miles and some weights later i was a hot sweaty mess.
speaking of hot..i dont know if its the hormones or the endorphins or the adrenaline or what but there was a fiiiiiine lookin fella gettin his lift on and i wanted jump on it for sure.


lunch was pretty much a lot like yesterday. especially in that it was DELICIOUS.

the rest of my butternut squash with some peppers and chickpeas. all on a bed of spinach. today everything was popped in the microwave for a quick steamin to switch it up from yesterdays madness. and an apple. also. please note my dear lunch guests.


sooo much food. there is no way i can review it all by myself. so i thought maybe some of yall would be interested in assisting me..do i smell a giveaway coming up!?

my excited was soon smashed down by the man or the dean maybe? i dont know. either which way i had to go to class. bummer.

i made myself an iced vanilla latte for the trip home and off i went.

i got home HANGRY and so the mum her dudefriend and i went out for thai food at exotic thai. sooo good. i took pictures but they arent on the computer yet so youre just gonna have to wait. i know i know. its killin you.

now im gonna fill up on as much tacky crime scene drama as i can for the next week. ice cream and yoga seem quite plausible for my future. :]

babies for breakfast. nom!
aka cottage cheese and blues and fone. [iber takes too long to type?]

pear for some serious snackage on my walk back to my apartment from class. i was going to eat it in class but i refrained from munchcrunching the poor chap next to mes ear off.

i picked up a shift for a girlie at work so i packed up this romaine/spinach salad with chicken and black beans salsa zukes summer squash carrots peppers etc.

aaaaaaaaaaaaaand some pretzels and a cutie for good measure.
im all out of those pretzels now and am sad. they were quite convenient and on sale for super cheap at meijer a while back [i never would have bought them otherwise].

work was pretty alright. i started to snap a few pictures of the joint so get ready for a cupcaketastic post in the near future.

we had a sign out about ordering our chocolate stout cupcakes for the festivities today and a guy who works at a restaurant across the street came in to talk to me about them. apparently they make a stout cake over in those parts. any which way. he thought it was the bees knees that we had similar cupcakes and so a few hours later he brought me back a big ole honkin piece of his cake for me to try. im not huge into cake. id much rather have a cookie or ice cream or chocolate. but who am i to turn down a gift? i was trying to get a picture but a customer came in. heres the box he brought it over in though. cute:

after i got home from work i wasnt starved but thought i should eat something dinneresque.
turkey. bbq sauce. veggies. all on a sandwich thin. with grapes. i had sooo many more than that. and some leftover carrot and pepper pieces.

get ready for some monotony in the next few days as i use up what i got here in the apartment before SPRING BREAK. WOO.

late night snackies. h2h. probar crumbles. lindt seventypercentdark. peanutbutter!!! apples slices. etc. [i thought this probar was loads better than the first flavor i tried. check it out yall. haha. ‘AMAZING GRASS.’ i suppose ‘SAMBAZON’ is pretty fun as well.]

and lord knows i went back for way more peanut butter. had to make a dent in the new jar. you know how it is.

i ended the evening with some nice detox yoga. it was a pretty lowkey day on the exercise front [as my mondays always are].

this morning i woke up and opted for some cereal. which is weird. because i never actually eat cereal when its to be expected. ill blame the hormones.
heaven. otherwise known as kashi h2h. fone. frozen banana. dried berries [last of the bag. tragic.] and chopped almonds. oh. any soymilk. yum.

then i went for a fabulous sixmiler. it took me fiftytwominutes ish based on the clock when i left and returned but i had to jog in place for FIVE full red lights. obnoxious for sure.

and um. hello gorgeous weather. it was highsixties/lowseventies all day long. with a nice cool breeze. i was so happy. yay yay yay.

in not so happy news. i managed to bleed all up in my shoe. the same thing happened in the other shoe a few weeks back. classy. [at least now theyre balanced?]

bleeding makes me hungry. or maybe running six miles does. or maybe breathing does. yeah. im gonna go with that one.

lunch was three eggies scrambled up with black beans. random veggies. turkey. and salsa. garnished with my roommates hot sauce. super good. and the rest of last nights apple cinnamized.

a cutie. my fav clif. an iced coffee/latte of sorts. and water. all packed up for class. i didnt end up eating the clif though. dont worry. its time will come. mwahahaha. ?

dinner was sooo good. i had a butternut squash that needed to get eatin before heading home for break so i roasted the whole thing up. then i mixed up some chickpeas. pepper. corn. and carrot. with some rice wine vinegar and bbq sauce and let the flavors all meld together. after the squash was ready to i plopped my mixture into the seedcubbiehole and popped it back into my toven [oaster takes too long to type?] and broiled it for a few minutes. SO GOOD. too bad i totally burnt my thumb off through the pot holder. i mean towel. that i was using to get it out of the toven. totally worth it though. i had some grapies to go along. picture that wee dish times thirtyseven. give or take.

now im just sort of hangin out. realizing that i ramblepost. sorry yall.

i think im going to do some yoga now.
